Among participants were Jammu and Kashmir (J&K) and Manipur - they believe that this annual food festival, organized by the Society for Research and Initiatives for Sustainable Technologies and Institutions (SRISTI), provides them an opportunity to showcase their cuisine culture as well as it gives them a chance to make a profit.
A stall-owner from Imphal, the capital of Manipur, wanted to serve Manipuri recipes to the people of Gujarat. A couple of food items on display were 'black rice kheer and lemongrass tea'.
A dry-fruit trader from Jammu and Kashmir's Ananatnag district has remarked that people from Gujarat understand the value of quality. Among their favorites are Kashmiri Kahwah.
There was a first-timer from Kutch - they conduct business in camel and sheep milk which earns them a handsome income. And, of course, some youths with engineering and software backgrounds also participated and had on offer unique creations.
