Top chefs of the world meet in San Sebastian, say eat small fish to save the planet

#foragefish #sardines #oceana #SanSebastian #health A group of chefs of the world have passed on a very important message for mankind – in their opinion, where fish is concerned, think small. Yes, small fish like anchovies, herrings, mackerel and sardines can make a huge difference where the health of the oceans are involved.
This is because many of the larger fish are facing threats of extinction due to overfishing.
This has been reported in nzherald.co.nz dated 18 March 2015.
The chefs from 20 countries have assembled in San Sebastian northeastern Spain for a summit with US-based ocean conservation group Oceana. Their message – go in for the small fish so that the larger ones can survive. If more people ate more little fish, it will benefit both human diets and seafood populations.
Small fish known as ‘forage fish’ are oily and good for health hence eating such fish needs to be encouraged rather than the tuna or swordfish. There is an abundance of the smaller fish to feed both the larger predators as well as plenty of people. This is the message of Oceana chief scientist Michael Hirshfield.
In order to popularize the concept of eating small fish, put them in burgers – like the best burger you have ever eaten could be mixed with anchovies.
The chefs would like to serve small oily fish at their restaurants as much as they as they can. That way, the younger chefs can be trained to understand that the small fish are as good for the planet as for the plate. Moreover, recipes can be developed that will make it easy for the average consumer to prepare them at home.
