Culture dictates new food habits - what is OK in Bengal and Kerala is taboo elsewhere

The beef controversy has affected eateries mostly in Mumbai and Pune but has had no effect as such on other states like Bengal, Kerala, Karnataka, Tamil Nadu, Goa and the Northeast where people are more liberal and the number of beef eaters is comparatively large.
For eateries in states like Bengal, Kerala, Karnataka, Tamil Nadu, Goa and the Northeast, it's business as usual. But, in other states, they could get caught by law-enforcers and cow protectors for eating their favorite dish. The alternative is to changeover to other dishes.
This has been reported in timesofindia.indiatimes.com dated 18 November 2015.
Many restaurants in Pune and Mumbai have switched over to to buffalo meat as an alternative but are losing customers because foodies do not relish buffalo meat since it causes rashes. Moreover, buffalo meat is fatty and usually of poor quality.
However, in Bengal, Kerala or the Northeast a variety of beef items are served in the eateries. The Northeast has always been liberal.
The problem in Goa is different. While beef sale and consumption are legal in Goa, it faces a different type of problem. Prices of the red meat have hit the roof as activists, sworn to cow protection, is choking supply lines from neighboring Karnataka. In spite of having necessary permission and documents, the activists create hurdles by stopping the vehicles in remote border areas where help is difficult to come by.
